In less than 18 hours, I’ll be boarding a jet plane, bidding adieu to the land Down Under… for now. Australia has truly captured my heart, and leaving feels like saying goodbye to a friend I’ve just met but already adore. It’s bittersweet, this departure, but I’m also eager to return home to Seattle, to see familiar faces and embrace the changes the past year has wrought.
As a parting gift to my gracious hosts, who’ve endured my late-night snack raids and questionable karaoke skills, I’ve decided to treat them to a culinary fiesta. Yes, that’s right—I’m cooking Mexican food! It’s the least I can do for friends who’ve made my stay in Melbourne unforgettable. And who knows, maybe my Mexican cooking will be the start of a new Australian food trend—Mex-Aus fusion cuisine, anyone?
Looking back on my Australian adventure, it’s been a whirlwind of unforgettable moments. From the awe-inspiring Uluru, where I battled the fiercest bush flies known to man, to the vibrant streets of Melbourne, where I discovered that Australians are not only experts at brewing beer but also at making you feel at home.
I’ll miss the stunning landscapes, the warm hospitality, and yes, even the relentless flies. But most of all, I’ll miss the sense of adventure that comes with exploring a new country, of stepping out of your comfort zone and discovering something new about yourself along the way.
